I stumbled upon Bettyskitchen YouTube channel when I was searching for the best carrot cake recipe. I tried about five recipes before trying out Betty's version of carrot cake. It was perfect! It's the perfect carrot cake with cream cheese topping. Moist and yummy, it's the royal kind of carrot cake. In my version, I left out the crushed pineapple and sweetened flaked coconut, and still it tastes as good. Almost everyone who tried the carrot cake asked me for the recipe but I refused to tell... so mean of me ;) But now I'm sharing with you the recipe, you can try it out for yourself.
